Lekker met salade, brood en kruidenkaas of pesto (rood of groen) erbij. Geweldig zomerrecept!<\/p>\n<p><strong>Ingredi\u00ebnten<\/strong><\/p>\n<p>2 courgettes, in dunne plakjes<br \/>\n8 eieren, losgeklopt<br \/>\n200 gram ricotta of Turkse yoghurt<br \/>\n1\/2 Italiaanse kruiden, vers of gedroogd<br \/>\nflinke snuf paprikapoeder<br \/>\nzout &amp; peper<br \/>\n100 gram geraspte Parmezaanse kaas<br \/>\nhalf potje zongedroogde tomaten op olie, in reepjes gesneden<br \/>\nolijfolie, om in te bakken<\/p>\n<p><strong>Bereiden<\/strong><br \/>\nMeng de eieren met de ricotta of yoghurt, kruiden en de helft van de geraspte kaas, zout en peper. Schep de courgetteplakjes en de tomatenreepjes er doorheen. Verhit de olie in een ruime koekenpan en giet het ei-groentemengsel er in. Bak de frittata zachtjes met een deksel op de pan tot deze aan de randen mooi bruin is, en zichzelf heeft &#8216;opgeblazen&#8217;. Dat duurt ongeveer een half uur. Bestrooi met de rest van de kaas en laat hem daarna nog even 5 minuten doorbakken.
